What are the different types of plumbing pipes and fittings?

Plumbing pipes are typically available as common parts such as straight lengths, elbow joints at various angles, and 3-way straight 'tee' pipes. Pipes and fittings are typically made of metal or plastics. How do you tell what size your plumbing pipes are?
