Great knives. Terrible handle

This knife block looks great and the blade is fantastic. But the handles are made of wood. 3 of my handles split or broke roughly 1 year after purchase. BE ADVISED that the wood handles are not covered under warranty.

We bought the Damascus set in December of 2021. Great knives with a great edge that holds the sharpness. The eight inch chef knife had the metal end of the handle break off. It was rusted where it was attached to the steel in the handle. I suspect all the knives have this flaw. Zwilling was more than happy to replace the knife at no charge.

the knives themselves are amazing! however, the handles on the scissors it comes with are very disappointing. I could find a more comfortable and better set at the dollar store. Still worth every penny though

Q: There is no bread knife. Is another knife in the set meant to serve this purpose?

  • A: Japanese knife lines often do not include a bread knife because the bread knife is not traditional to Japanese cookery. The Forged Damascus knives are very sharp though, and we have found that the 8” chef’s knife is sharp enough to evenly slice most breads without tearing. The edge must be well maintained over time in order to continue working for this purpose however. (as with any straight edge knife, the edges of the Forged Damascus set knives can dull over time and should be maintained using the included diamond steel).

Q: What is the edge angle on these knives, I.e are they considered to have a Japanese or a North American edge?

  • A: The Henckels International Forged Damascus knives are manufactured using Japanese Damascus layered steel with a 61 rockwell core hardness. The kitchen knife edges are sharpened to ~15o angle (ie. a finer edge than a typical “western” kitchen knife)
