Q: Does this roasting pan need a rack for roasting chickens/small turkeys/roasts? Would a metal rack scratch the enamel?

A: I never use a rack inside pan when cooking any meat items in the roaster. I have 3 different sizes of this roaster and have used this type for years. I use the drippings in the bottom of the pan for my homemade gravies. I just put the meat inside and slide the roaster onto the oven racks. Would a rack inside scratch - I could not answer that. Hope this helps.

A: It is not suggested to use in the dish washer. The material is Carbon steel with enamel coating. There are no chemical or non-stick materials in this pan.

Q: matte vs glossy finish In the store nearest me these roasters are in black matte finish rather than the glossy blue finish in the photo. I am wondering how this will affect cleaning, cooking time, etc.

A: No change for coating color, all in black color to be used from the beginning until now. We are unable to provide cooking time since we don't know what kind of food you would be cooking.
