Decent but won’t last

I have had this smoker for 5 years now, started off good. Lots of room for food, keeps the temperature you set and is pretty easy in terms of set it and forget it. But in the last 2 years it is falling apart, all of the plastic had broken off or fallen off(it never sits outside) , the digital display for the heating element keeps going in to error mode when I am smoking after about 2 hours need to unplug and reset and start over. It is a decent smoker just poor build quality in my opinion.

Q: Can you use your own wood? Can I use my own wood chunks? If so, what are the size limitations?

  • A: Actually you can work around the pucks a little. What I did was get a piece of wood, drill a hole the size of the pucks (both depth and circumference), then I line the hole with aluminum foil, fill it up with desired wood chips ( I use fairly fine ground chips like lil chief ones), then cover the top with remaining aluminum foil, then I hammer it flat. I just make sure that there are a few holes in the top so the smoke gets out. I never had any jam yet. Works great for me.

Q: What is the lowest outdoor temperature that this can be effectively used at? I would like to be able to smoke when it's -20 outside.

  • A: At -20 celcius I doubt you can keep up the temp in the smoker, depending on what temp you want and how much mass you are smoking, so it will take a lot longer to cook. And wind in the cold is your enemy.

  • A: Yes, the top and back are definitely hotter than the bottom and the front. If you have multiple racks of fish then I rotate and spin them periodically to try to finish at the same time.

  • A: I think it's absolutely worth it! It takes care of the temperature and cooking time without you having to worry about it at at all. I used to have two other previous smokers (one charcoal, one electric), and the digital timer and temperature makes smoking food an absolute breeze!

Q: Can i leave it outdoors Wanted to know if this unit could be left outdoors on my deck in the rain or in the winter .

  • A: You can leave it outside during the spring, summer and fall, providing that you purchase the cover for it. Because the flue that the wood pucks are stacked in has an entry into the electronics area, keeping this dry is a must. I purchased a kitchen cart on wheels and the cover, and that's where it resides during the warmer weather. I did leave mine out during the winter, but it was inside my hardtop gazebo on my deck so that I could still use it if I wanted to.

  • A: To cold smoke using this unit, I would recommend purchasing the cold smoker add-on unit. They run anywhere from $70.00 to $100.00. I recently tried to cold smoke some cheeses using only the smoker element and no oven temps. I was surprised to find that the interior of the unit got up to over 130 degrees. My cheeses were puddles instead of blocks, but they sure tasted good. With the add-on unit, it displaces that heat from the element by using a metal box to house the element and drop pan, and a dryer type metal hose, so that the smoke has to travel a distance before entering the main cabinet.
