I used it once and it got so sticky and gross after cooking burgers I couldn’t use it again and took it back.

Thank you for taking time to leave a review. We're sorry to hear that you returned your griddle insert before allowing us a chance to assist. The Vermont Casting Griddle Insert does require seasoning and maintenance in order to function as intended.

Seasoning your griddle improves cooking performance, creates a non-stick surface, prevents
rust due to moisture and humidity, and ensures a long life for your griddle.
HOW TO SEASON:
1. Wash the griddle with soap and hot water.
2. Rinse and dry thoroughly with a towel.
IMPORTANT: NEVER ALLOW THE GRIDDLE TO SOAK IN WATER.
3. Apply oil to the entire griddle. Be sure to coat the top, bottom and sides.
4. Remove the cooking grate(s).
5. With the lid closed preheat your barbecue to 121 – 149°C (250 – 300°F). Allow the oil to bake into the griddle surface for 20 – 25 minutes.
6. To complete seasoning, you must shut down the barbecue and allow the griddle to completely cool.

Maintenance/Cleaning:
Care should be taken when cleaning your griddle to protect the seasoning.- ONLY use a scrub pad to remove baked on grease.- Use a warm, damp cloth to wipe the surface.- If you must clean your griddle with mild detergent, rinse and dry thoroughly, and apply a light coating of oil to protect while not in use. Do not soak.

The outside of the box indicates this is Porcelain coated. It is not coated with Porcelain it just has a black cast iron finish.

This griddle is most certainly porcelain coated. You may have expected a thick and shiny finish instead of a coarse surface finish. We do not use thick shiny porcelain finishes on a griddle because of scraping tools that are frequently used on the surface, that could cause chipping and cracking.
