Q: Does this have a built in regulator for adding a propane hose and larger propane tank?

A: It comes with a connection for a small propane bottle or a propane hose. I personally hook it up to a regular 25 lbs BBQ propane tank via a hose. Can't speak to a larger arrangement. As far as a regulator goes, I imagine that would be on the propane tank itself.

Q: Does it have simmer control? Or it is just two setting low/high?

A: We find it simmers well, and the flame is gradually adjustable from low to high -- i.e. there is a dial which gives you a range of flame heights rather than just two settings.
