Steel Excellence

Sadly, my knife set is away from me in a shipping container stranded in Quebec. This steel is great, and the small cadre of knives I do have were well and easily sharpened to slice paper in no time at all.

Handle uncomfortable. 3/4" shorter than before.

Handle is 3/4" shorter than it was 5 years ago. The original felt good in the hand. This one is too short. Paderno should have left well enough alone and raised their price if material costs increased. Instead, they ruined a perfectly fine product. Every time I hold this thing I think about buying another from one of Paderno's competitors. Very dumb move, Paderno. Very, very dumb.
