I bought one a few years ago and the bottom delaminated. It’s a life time warranty with Paderno however I did not keep the receipt. We liked the pan so we bought another one.

Q: Can this go in the oven?

A: On the package it states it is NOT dishwasher or oven safe. Remembering it can't go in the dishwasher will not be easy (and it voids to warranty). The package goes on to say you can't use high heat on the element (low to medium max), Cooking sprays should not be used as they leave a residue that is difficult to remove and causes food to stick. I'm relaying info found on the package containing Paderno Classic Non-Stick Fry Pan. I've put mine in the dishwasher maybe 10 time and always need to butter to make it non-stick surface.

Q: what is the difference in quality for Paderno Forged Non-Stick and Canadian Signature pans. Does one last longer than other.

A: The Canadian Signature fry pans feature a stainless steel body construction which is stronger and more durable than the aluminum body construction of the Classic pans. As such, the Signature pans will stand up to wear and tear better. The Signature pans are also oven-safe and dishwasher-safe if these are important features to you, and they feature a non-stick coating that is designed for the optimal food release (ie “non-stickiness”).

Q: Many frypans do not have a totally smooth finish on the bottom. For smooth top ranges, this causes scratches. Is this pan with a totally smooth mirror finish? If not which do you recommend?

Q: Can you use this pan to sear on high heat?

A: Yes, you can sear in this pan for short periods of time. However, it is not recommended to use on high heat for long periods of time. In fact, a high temperature setting is not required to reach a searing temperature. Because the aluminum pan is very efficient at conducting and distributing heat, the temperature setting likely only needs to be at a mid level in order to accomplish searing. If you are looking for a fry pan to truly cook at high temperatures, typically a stainless steel pan without any non-stick coating would be best suited for this purpose. Paderno has just introduced 2 new tri-ply clad stainless steel fry pans (item #s 142-3935 and 142-3936) that would be better suited for this purpose and are also oven-safe.
