We already have one of these for our large Christmas get together and needed another one. Works great, keep the food hot but not burnt. Obviously a professional model with the water bath would be best, but this is great value if you need it.

Q: I want to use 2 compartments instead of 3 so to make it bigger. Can I use 2 foil pans or 2 glass pans (if it fits) instead of the containers that comes with it?

A: 1 US Quart (liquid) is 2.366L; 2.5 quarts = 5.9L; 3 compartments x 2.5 quarts (or 5.9L) = Total of 7.5 quarts (17.75L)

Q: Can this be used in a small take out restaurant Also the ad state it will keep food warm for up to 3 hours; is the three hours the maximum length of time it can be operated for at one time or is there another reason.

A: I think that the 3 hours have more to do with bacteria growth - if it sits too long at that temperature, then you could get some nasty stuff growing.
