Painfully slow - accuracy in question

I bought this product about 8 months ago. I've used it 50 or more times and have been consistently disappointed. This by no means is an instant thermometer. It's the slowest I've ever seen. Mercury thermometers were faster than this! When measuring chicken, it starts at room temp, 70F and then painfully climbs by 2's or 3's until it finally reaches 170 or 180F. This takes more than 20 seconds. Sometimes it just never gets to a temperature it decides it can stop at, just keeps flitting between a range of 5 or more degrees.
