Q: The Paderno knives need to be sharpened to 12° Does this sharpener maintain that angle of edge? It doesn't say anywhere I can find?
4 years agoA: They are factory sharpened to 12 degrees but as they ae made of the softer German steel i wouldn't sharpen past 15 and really keep them at 20 for longer lasting edge. 12 is for super hard Japanese knives and they do 12 from factory to make the knife feel sharper but it'll dull fast
