Q: When placing the disc between how do you orient the bump vs the flat side to the hamburger ? What is the purpose of the bump or raised area on one side of the disc?

A: Hello, here is the info: as meat cooks, the proteins contract so that the whole patty shrinks and puffs up in the middle. Making a kind of indentation or dimple in the middle counteracts that effect so you end up with a nice, even patty. Hope this helps, have a nice day!
