The ultra-thick bases are fortified with an aluminum core for optimal heat distribution and retention. The pieces in this non-stick cookware set have compatible magnetized stainless steel caps that are suited for all stovetops, even induction. A: No idea, but I love them. They heat to boil quickly. Heat distribution is very even. Clear lids let you see how your dish is progressing. Excellent fasteners welding handle to pot. Low heat transfer into handle I can carry boiling pot with bare hand. My only complaint is that you can’t layout more than three full length strips of bacon in the frying pan. I bought a cast iron pan to round out my set.

A: The non stick coating is Whitford Eterna, truly non-stick which is PTFE and PFOA free and tested against FDA standards to ensure safety for food contact.

Q: I have a question regarding the stay cool handles. I have a gas stove and I want to be sure the handles really do stay cool. My old set the handles get hot so that is why I'm looking at the Paderno.

A: Hi there, The handles on this cookware are designed specifically to follow manufacturing guidelines for maximum temperature of handles when used as intended. You will notice the “gap” in the handle where it attaches to the pot/pan body. This is intentional as it provides a release for heat. Without this gap, the handle would trap heat which would then be absorbed and distributed throughout the handle. That said, there is always a risk of any handle heating up to more than a desirable temperature – particularly when cooking with gas. In order to minimize this risk, it is important to ensure that the burner is set such that the flame of the burner does not extend up the sides of the pot or pan. If the flame does extend past the edges of the base of the pan, it significantly increases the risk of higher handle temperatures.
