Q: my question is about using the fondue for cheese. I understand that you can only use the insert for the cheese. But how do you keep it warm. Do you use the main pot and add water? and keep the water hot from the fuel?

A: It depend on what you are trying to keep warm, if you are making a cheese fondue, chocolate fondue or meat (use bouillion broth) it will stay warm in the main pot by the fuel underneath. Then you use the fondue sticks to put your meat, pototates, bread, fruit slices etc depending on what type of fondue you are making, and place in the pot to cook .Try it, it's so much fun!
