Good cookware for cooking normally on electric range, but could be better.
My 14-year old Frigidaire model CFEF358ES1 electric range decided to show its age the other day, by arcing the large element. This blew a small hole in an old Dutch oven, along with a corresponding hole in the element. I visually inspected the terminal block, and replaced the element with a spare, and the replacement element seems to work fine. This particular 8" 240V/2400W 5-ring element is right underneath the fan, and gets used the most use. It's also the one where I do a lot of grilling on High using a cast iron fry pan, so I'm guessing 14 years of occasional cast iron grilling will wear an element down. So now I was shopping for a new pot, and as timing would have it, this set was on super sale. This is almost the perfect set I've been waiting for.
The dutch oven was used to cook a no-water recipe of 6 chicken legs cut-up with vegetables. There was a little burning, even at medium heat, but it was very easy to clean the pot afterwards. The inside of this pot now has some staining. From the Q&A, the exterior steel layers are apparently 18/0 stainless (18% chromium, 0.75% nickel) to make them work with induction. However 18/0 is prone to staining. All-Clad uses 18/10 stainless for it's cooking surface, and their cookware works for induction, so go figure. In any case, the staining doesn't bother me, because it's on the inside, and apparently Bar Keepers Friend will get rid of the stains. The staining doesn't bother me enough yet to shell out the $2.99 or $3.99 Canadian Tire is asking for this cleaner.
The small 1-qt saucepan was used to boil a couple eggs on medium-high heat. This took forever. The instructions say not to use this cookware on High heat, however I think these instructions are for people, who have never cooked before. Really, I don't know any recipe that calls for constant cooking on High, except for grilling steaks, and for that, the cast iron pan comes out. I decided to do a side-by side comparison between the 1-qt saucepan in this set, and a slightly larger old saucepan (encapsulated base only) that was previously used for boiling eggs. I measured out 3 cups of cold water for each pot, and placed on separate 6" 240V/1500W elements, both set on High. Both pots started boiling after about 7-7.5 minutes. So, my eggs won't get cooked any faster, but after doing this test, they won't get cooked any slower. The small saucepan only covered 3 rings of the 4-ring element, so a lot of energy was not being utilized. The old saucepan covered just a bit of the 4th ring. I decided to run the boil test again, this time comparing the new 1-qt saucepan filled with 3 cups cold water vs. the new 2-qt saucepan filled with 4 cups cold water. The 2-qt saucepan covers all 4 rings of the 6" element. The extra water for the larger saucepan would be needed to fully submerge the imaginary eggs. The 1-qt saucepan boiled after about 7-7.5 minutes, and the 2-qt saucepan boiled after about 8-8.5 minutes. Not a huge difference, but I'm guessing I'm wasting about 25-30% of the energy, by not covering all the rings with the 1-qt saucepan. This small saucepan would only be used for boiling eggs, so I won't be shopping for an induction range just yet, but something to think about. No idea how these pots will react with an induction range set on High, so if you have an induction range, you'll have to do your own test at your own risk.
The 3-qt covered saucepan was used for cooking a traditional recipe that starts on High, and then the temperature is lowered, to allow the water to reduce, like most recipes. Food turned-out fine, and the pot cleaned-up fine. Maybe a little staining on the inside, but again, this doesn't bother me.
Why only 4 stars?
- The pots are a little heavy.
- The lid handles get a little warm when cooking.
- Where the handles meet the lid or pot sides, where the rivet is, the metal could be rounded a bit more. The metal is not sharp, but when hand-washing, the edge is noticeable. Bothers me a bit, but not enough to take a file to it.
- Same size/ redundant small lids for 2-qt saucepan and steamer, and large lids for 3-qt saucepan and skillet. If one of these glass lids breaks, I'll probably be thankful for the redundancy, however right out of the box, I'd gladly trade both these redundant lids for a 1.5-qt covered sauce pan, or a small skillet for frying a couple eggs.
- 18/0 non-stainless. Maybe have a non-induction set that's 18/10 that makes better use of the small electric element, or figure-out how All-Clad does it. I'm sure 1/3 of your customers still have electric ranges, and have no plans to change, so why not have a set that doesn't compromise? You can sell us another set of cookware if we ever decide to go induction. Win-win.

A: Hi,
This is the sku for the product: MCP-12N3C
All walls & base of the cookware have a layer of aluminum – it is one continuous piece of aluminum that extends up the walls of the cookware, covered by a layer of stainless steel on the exterior, and another layer of stainless steel on the interior (3 layers total).
