your smoker /bbq cant even get up to cooking heat as a bbq with max load of kingsford charcoal not a good design back to my olde hibachi

First smoker

Not sure if I would recommand it? It is my first smoker, thermometer is off by 75 - 100 degres. I didn't want to make a mess of my meat, so it ended in the BBQ, set up as a smoker. Takes a lot of charcoal, tried both the wood chip on the charcoal and in an aluminum warp, same result. I cooked a 10 pds brisket. It ended up great, so 5 hrs in the smoker and 3 in the BBQ. I'll give it a second try before giving up.

Wont reach temp

Its only -5C out (very little wind) and although I have sufficient hot bulk charcoal and used boiling water for the water pan, the unit will not heat up past 180 deg and thats using a seperate probe (original is garbage) How am I supposed to get a brisket to 185? I have tried every variation of venting with no luck. Is this unit good for summers only???

Q: How to keep tempurature up? Just wondering how to keep the temperature up? It seems to keep about 150 degrees but not higher. just wondering if I'm doing something wrong, or the temperature guage is that far off.

  • A: I found the thermometer to be off by about 100 degrees. I bought a maverick thermometer to compare. I found that the best way to keep the temperature up is put only a little water in the water pan and keep your charcoal door open, and the top chimney open just a little bit (which prevents too much CO2 buildup).

Q: Is it safe to use this smoker on the grass?

  • A: I wouldn't. Place on non-combustible surface because there is a space about 1/4 inch between the charcoal bowl and the walls, allowing hot embers to drip down to the ground.

Q: Is there a vent near the bottom of the smoker to allow air flow to the fire? The door is for access not ventilation

Q: What's the point of the iron supports and the S-hooks? They didn't say to install them in the instructions but do show a picture of them on the first page. I have no idea what they're for...
