Runs Really Hot

It is not possible to control the temp effectively and it runs too hot without frequently opening the door. As such your smoking project requires constant attention. This will allow you to smoke food but if if you are looking to set and forget, invest in a more expensive smoker.

No, I do not recommend this product.

Q: I cant get the temperature below 325*F. Is my regulator malfuntioning? this is my first time using this smoker, and it is set as low as it can go,, full water in the tray, and I have been playing with the vent to try to change the temperature. any suggestions, or do I have a bad regulator?

  • A: The smoker is misnamed. It should be named a verticle barbecue. You will have to return it and purchase a real smoker that can be controlled at 150-175 degrees required for actually smoking meat.

Q: where do you put the wood chips? The bowl has holes cut into it so all the burnt ash falls into the unit if you put your wood in there. See photo in reviews

  • A: I use a small cast iron frying pan. works great. sometimes i use the provided pan to put charcoal in and shut the propane off. Remember to keep the water bowl from running dry.

Q: can you use charcoal in the master chef propane smoker?

2 Answers
  • A: Actually, the number provided is the manufacturer (the first Google result gives the manufacturer name). This is the rebranded version. According to the manufacturer, it is dual fuel. It can use charcoal or propane. The specs are identical to their Master***** Pro available at other national retailers. The provided number will give you the same details. Check out "smokingmeatforums dot com" for modifications etc.

  • A: the box and doors are in one piece and that's about it.. The grills, holders, thermometer, legs, burner and tray all have to be installed. Bit of a pain, but can all be done with a Phillips screwdriver and about 45 minutes if you take your time.

Q: Does the smoker make a lot of smoke? I live in a row of townhouses in the middle of Ottawa and I don't want to make to much smoke that I tick off the houses around me.

  • A: Yes, it will smoke like crazy if you just drop the wood in the fire pan as per the directions. The wood chips light on fire and burn to ash in a few minutes. That means lots of smoke and very little penetration in the meat. Smokers are meant to slow cook and slow smoke. A big puff of smoke and then nothing just spoils the taste. A good smoker will have a very slight "wisp" of blue smoke coming out and nearly constant during the cook. I ended up putting a foil covered metal grate over the fire bowl and put the chips on that. Once that was done and I made some "modifications" to get the temperature in the 200-250 range (ended up making a new nozzle for the regulator on my metal lathe, DO NOT attempt if you don't know what you're doing with propane!) I had that just about perfect clue smoke wisp from my applewood chips. I don't even need to soak them now if I don't want to. I often do with apple juice or my favorite beer for a more pleasing taste though. :)

Q: is it Natural cas convertable ? could it be converted to natural gas ? is the converting kit available in Canadian tire?

2 Answers
  • A: That would require a different regulator, nozzle and burner. You would have to contact he manufacturer to find out if it's possible (phone number has been posted several times in other answers) but I doubt it's possible.
