Q: What is the Rockwell hardness of these knifes? Also are the steak knifes forged aswell?

A: The steel we use have been developed and refined for over 200 years, and are a big part of what makes ZWILLING J.A. HENCKELS knives special. The initial sharpness, edge retention, re-sharpen ability and all-around superior performance of HENCKELS knives are the result of combining the correct steel formulation with rigorous hardening and tempering procedures, followed by finishing and sharpening processes. These steps create knives that have superior initial sharpness, but also retain their edge, and can be re-sharpened effectively over the long term. For the steak knives – yes they are forged as well.

Q: Can the shears cut through chicken and smaller turkey bones?

A: The shears can be used for sectioning chickens and may be able to cut through some smaller bones (eg. chicken rib bones). Generally when using shears on poultry one cuts through the joints and connective tissues rather than bones however.

Q: Are the knives 18/10 stainless

A: No, the knives are not 18/10 Stainless. 18/10 Stainless Steel is not suitable for kitchen knives because the metals that are added to 18/10 steel that add sheen and rust resistance (Chrome and Nickel) also make the 18/10 stainless relatively soft and unable to take or hold an edge. Henckels Forged Aviara knives are manufactured using high carbon no-stain steel that uses different ingredients and a different formulation from 18/10. This proprietary steel can be properly tempered and hardened so that it can be properly sharpened and honed for a lifetime of fine cutting performance.
