Great Buy Worth Every Penny

Bought this on sale as I didn't have a small Santoku knife for my set yet. It has performed well on a variety of foods and is easy to use even with my large hands. I have been a chef for over 20 years and do all the cooking at home as well as for large special occasions. This knife works well for chopping and prepping all the veggies and fruits we eat daily. Have yet to try it out on meats but it should perform well. Seems to keep a sharp edge so far and it is kept sharp and honed with my "Chef's Choice" Asian and European angled electric knife sharpener. Remember that Asian and European knives have different angles of blades, so use the proper ones on each blade.
